We proudly serve our milk coffees on the Capixaba by Solace, our own coffee roasted in partnership with Made of Many in Stanmore.

Capixaba is a specialty lot named after the co-op where this beautiful coffee is grown and processed. The co-op works with a small group of carefully selected family-run farms in the local area to deliver an excellent specialty-grade coffee.

We are proud to have highly skilled baristas who expertly prepare our coffee to honour and highlight the unique flavours of each roast.

 
 
 

House-made, local & Seasonal

 

Our menu is full of house-made goods, and uses seasonal and local produce. We take pride in sourcing ingredients from small Australian producers where possible, who are committed to sustainable farming practices.

Joshua Harrison

Joshua (Josh) has a heartfelt passion for hospitality. Following 6+ years working in the industry early in his career, Josh successfully worked 11 years in tech, servicing the hospitality industry as Chief Operating Office of Aussie startup Kounta. He brings the unique experience of growing a company from 2 people to 100, then navigating a successful $90M AUD acquisition, followed by 3 years of senior leadership in global company Lightspeed.

 
 
 

Sebastian Shearman
Owner / General Manager

 

Sebastian (Bas) has dedicated his career to the mastery of all aspects of coffee. He’s worked across a variety of specialty coffee brands (including Pablo & Rusty’s and Mecca Coffee) in wholesale, beverage development and training, followed by a more recent stint at Food Co. Bas tackled coffee and hospitality development at scale, with exposure to franchise and leasing.

 

Amanda Chebatte
Food Director

 

Motivated by a desire to enrich our relationship with food, Amanda delivers passion-driven content about food, cooking and eating. Her work spans recipe development, food styling, editing and producing for national television series and commercials, magazines and cookbooks (including Donna Hay, Gourmet Traveller and The Australian Women’s Weekly), social media and branded content for chefs, restaurants and local artisans.
